Mojo Sauce [From the Canary Islands guidebook by Lonely Planet, Copyright Lonely Plant 2001] INGREDIENTS Half a cup of olive oil Water Eight small cloves of garlic, peeled Quater cup of wine vinegar Four small, fresh red chili peppers (more if you can take the heat) Two ripe tomatoes Half a teaspoon of cumin One to two teaspoons of salt Half a teaspoon of paprika DIRECTIONS Pour all the olive oil inter a blender and add the paprika, cumin, vinegar, garlic and salt. Boil the chili peppers in half a cup of water for about 15 minutes, then add to the mixture in the blender. Put the tomatoes on a skewer and lightly roast them over a low flame until the skin is dry. Remove the skin, slice up the tomatoes and put them into the blender. Blend until you are left with a thick, smooth sauce.
